Foods I do not like !

I am not a very “picky” person when it comes to food but there are some foods that I do not like at all! I will begin with mushrooms, I do not like the texture, smell or taste of mushrooms. Mushrooms are fungi and I do not understand why anyone would want to eat fungus? They are slimy and the distinct smell of them makes me sick. The worst concoction that was ever invented is frying mushrooms and onions with butter and salt.My mom always explains to me that it caramelizes the onions and the flavours mix together for a delicious taste but I disagree. It looks like fried worms mixed with brown circles and the taste is even worse!

Let’s move on to onions… they smell and taste like armpit odour and that disgusts me. Onions are the worst when they are not cooked and just cut up. The smell is horrific and when you are trying to cut them they burn your eyes. Your eyes then start watering and crying because your body is telling you that onions are disgusting and shouldn’t be used as food.

Some people may love the foods I do not like but that is fine! Here goes the list of foods I do not like one bit… mushrooms, onions, liver, duck, snail, sweet pickles, egg salad sandwiches, meat loaf, chicken salad sandwiches, Thai peanut butter chicken, oysters and last but not least olives (black or green)!

Leave a comment on the foods you do not like ! :)

Lemon Chicken Spaghettini *

From Chatelaine:

Ingredients

  • 1/2 500-g pkg cappellini or spaghettini
  • 1 lemon
  • 1 tbsp (15 mL) Dijon mustard
  • 1/4 tsp (1 mL) each granulated sugar and salt
  • 2 skinless, boneless chicken breasts
  • Pinches of salt and ground pepper
  • 3 tbsp (45 mL) butter
  • 3 garlic cloves, minced
  • 8 oz (250 g) snow peas or green beans, trimmed
  • 1 cup (250 mL) coarsely chopped fresh cilantro or basil

Directions

  1. Cook pasta following package directions, about 6 to 8 min. Meanwhile, finely grate 2 tsp (10 mL) lemon peel into a small bowl, then squeeze in about 2 tbsp (30 mL) juice. Whisk in Dijon, sugar and 1/4 tsp (1 mL) salt. Slice chicken into thin strips. Sprinkle with pinches of salt and pepper. Melt 2 tbsp (30 mL) butter in a large, non-stick frying pan over medium-high heat, then add garlic. Stir constantly for 1 min. Then add chicken and stir-fry until golden, 3 to 4 minutes. Remove from heat.
  2. Add peas to pasta water for last 1 min of cooking. (If using beans, add for last 3 min.) Drain pasta and peas. Return to pasta pot. Drizzle with lemon mixture. Stir in chicken and garlic, cilantro and 1 tbsp (15 mL) butter. Add more salt and pepper, if needed

My Thoughts on this recipe*

I found this recipe from chatelaine magazine online. I really love the flavor of the lemon! Chicken mixed with pasta is one of my favorite foods, I could eat it everyday. I decided that I wanted to try this recipe myself because it sounded like the perfect recipe for me! It did not take very long to make and it was absolutely delicious!

The tangy taste from the lemon mixed with the salty chicken made my mouth water. This is a recipe that I can make for myself when nobody is home! It is quick, easy and not many ingredients are needed to make a healthy and substantial dinner.

I loved this recipe so much that I decided to make it again this week! Instead of using spaghetti noodles I used Penne to mix it up and it worked just as well and tasted amazing. Lemon chicken spaghetti is a great recipe that I would recommend to anyone.

It can be made for a dinner party, family dinner, potluck and the leftovers can be eaten at lunch! Yummm! I would recommend this recipe to anyone that likes pasta and I know many people do!

In the Kitchen

I have been cooking with my mom my entire life. She has taught me so many things about food and cooking. I always have the best time with her and not just because we create and explore with food, it’s because we spend time together and bond really well.

Thinking back I have many fun memories with my mom in the kitchen but this specific memory really stands out to me. When I was younger my mom and I used to watch the food network together on television. Our favourite shows were Barefoot Contessa, Cooking with Rachel Ray, Emerald and Iron Chef! After we would watch these we would go to the kitchen and begin to create our own recipes.

I always loved to pretend that I had my very own cooking show that was on the food network. My mom would play along with my idea and I was the head chef while she was the sue chef. We would speak out loud and demonstrate how to cook, step by step to the “camera” that was filming us for our show. We would laugh more then anything and just have an amazing time! I remember how much I loved doing this with my mom and to me it was the best thing to do in the world.

My mom taught me so many skills about cooking at such a young age and this really helps me now. My mom would always say, “Never use a recipe, just let your imagination run wild.” This saying has and always will stick with me when I am in the kitchen.

Cooking without a recipe is exhilarating and exciting, you never know what you are going to create and how it is going to taste and that is the fun part. This memory is one of my fondest and I am proud to say that my mom and I know how to have a goodtime in the kitchen!

My Thoughts on this recipe*

A few weeks ago I was in the mood to bake but I wanted to try something completely new and unique. I went on to YouTube and began to type in deserts, as I was scrolling down I saw the headline “Ore stuffed chocolate chip cookies!” Yummm!! I love cookies and especially these two; I thought to myself what could be better? My two favourite cookies stuffed together!

I clicked on the link and watch step by step how to make the cookies! I then went and bought all my ingredients and began to bake. It wasn’t very time consuming and I actually enjoyed myself! I put them in the oven and when it was time to take them out my kitchen smelt like chocolate, sugar and cookies, it was an amazing scent!

I then went to take a bite of the cookie and I have honestly never tasted something so good! These cookies are easy and feasible to make. They are great for dinner parties, children birthday parties, getting together with friends, picnic, lunch and a tasty snack!

To make the cookies even better try dipping them in milk, I did this and it felt like heaven in my mouth. Go home and make these cookies today, they are definitely worth the time and effort!
