Lemon Chicken Spaghettini *

Ingredients


  • 1/2 500-g pkg cappellini or spaghettini
  • 1 lemon
  • 1 tbsp (15 mL) Dijon mustard
  • 1/4 tsp (1 mL) each granulated sugar and salt
  • 2 skinless, boneless chicken breasts
  • Pinches of salt and ground pepper
  • 3 tbsp (45 mL) butter
  • 3 garlic cloves, minced
  • 8 oz (250 g) snow peas or green beans, trimmed
  • 1 cup (250 mL) coarsely chopped fresh cilantro or basil












Directions

  1. Cook pasta following package directions, about 6 to 8 min. Meanwhile, finely grate 2 tsp (10 mL) lemon peel into a small bowl, then squeeze in about 2 tbsp (30 mL) juice. Whisk in Dijon, sugar and 1/4 tsp (1 mL) salt. Slice chicken into thin strips. Sprinkle with pinches of salt and pepper. Melt 2 tbsp (30 mL) butter in a large, non-stick frying pan over medium-high heat, then add garlic. Stir constantly for 1 min. Then add chicken and stir-fry until golden, 3 to 4 minutes. Remove from heat.
  2. Add peas to pasta water for last 1 min of cooking. (If using beans, add for last 3 min.) Drain pasta and peas. Return to pasta pot. Drizzle with lemon mixture. Stir in chicken and garlic, cilantro and 1 tbsp (15 mL) butter. Add more salt and pepper, if needed





My Thoughts on this recipe*


I found this recipe from chatelaine magazine online. I really love the flavor of the lemon! Chicken mixed with pasta is one of my favorite foods, I could eat it everyday. I decided that I wanted to try this recipe myself because it sounded like the perfect recipe for me! It did not take very long to make and it was absolutely delicious!

The tangy taste from the lemon mixed with the salty chicken made my mouth water. This is a recipe that I can make for myself when nobody is home! It is quick, easy and not many ingredients are needed to make a healthy and substantial dinner.

 I loved this recipe so much that I decided to make it again this week! Instead of using spaghetti noodles I used Penne to mix it up and it worked just as well and tasted amazing. Lemon chicken spaghetti is a great recipe that I would recommend to anyone.

 It can be made for a dinner party, family dinner, potluck and the leftovers can be eaten at lunch! Yummm! I would recommend this recipe to anyone that likes pasta and I know many people do!

  2. Thank you glad you enjoy my blog! :) I thought doing it on food would be a neat idea and mushrooms would be very lovely in it for people that enjoy them for me not so much I really don't like mushrooms ! See up to "Food's I really don't like post"
